I cannot take all the credit for this recipe. It is straight from my FIXATE volume 2 recipe book. This is just one of the nutrition programs that I have access to and thank goodness for that! I have been eyeing this recipe for a while now because I am OBSESSED with peach cobbler (always with ice cream on top). I decided to give this recipe a try seeing as the holidays are coming up and this is a perfect dessert for any those family/friend gatherings (if COVID allows).
First off, I have NEVER picked out or cut peaches… I know what you’re thinking… “How is this girl going to love peach cobbler and she has never cut a peach before, is she alright!?” Let’s just say that I have not heard the end of it from my husband! Speaking of him, he was the one that showed me the ropes in all things peach cutting. (What are husbands for, am I right!?!) After that, this recipe was a breeze to make. One of the easiest baking recipes I have attempted and it was AMAZING!!! I cannot wait to be able to bring this peach cobbler to all of my holiday parties to come.

Serves: 9 (approx. 3/4 cup each)
Prep Time: 15 min.
Cooking Time: 35 min.
CONTAINER EQUIVALENTS: 1/2 Purple 1 Yellow 1 tsp
INGREDIENTS:
6 medium peaches, peeled, sliced (approx. 4 cups)
1/4 cup coconut sugar, divided use
1 tsp. cornstarch
1 Tbsp. fresh lemon juice
1/2 tsp. ground cinnamon
1 cup all-purpose flour
1 1/2 tsp. baking powder
1/2 tsp. sea salt
1/4 cold unsalted butter, cut into small cubes
1/2 cup unsweetened coconut milk beverage
SPECIAL EQUIPMENT:
Nonstick cooking spray
INSTRUCTIONS:
- Preheat over to 375 degrees F.
- Lightly coat 9×9-inch baking pan with spray. Set aside.
- Combine peaches, 3 Tbsp sugar, cornstarch, lemon juice, and cinnamon in a medium bowl; toss gently to blend. Place in prepared pan. Set aside.
- Combine flour, remaining 1 Tbsp. sugar, baking powder, and salt; mix well.
- Add butter; knead butter into flour mixture with clean fingers until mixture resembles coarse crumbs.
- Add coconut milk; mix until well blended. Drop 9 heaping Tbsp. of flour mixture over top of peaches. (Each heaping Tbsp. will make one cobbler serving.)
- Bake for 30 to 35 minutes, or until topping is brown and peaches are bubbling.
- Cut into nine (3×3-inch) servings.
